I’ve been feeling inspired to cook lately (here’s to hoping that lasts awhile), so I made this delicious Buddha Bowl for lunch today. I know I’m always looking for quick and healthy recipes, as it feels like I never have enough time to actually cook something (shout out to Trader Joe’s). But this took me around 30 minutes and I’m really proud of how it turned out, so I thought I would share!
