Buddha Bowl Recipe

I've been feeling inspired to cook lately (here's to hoping that lasts awhile), so I made this delicious Buddha Bowl for lunch today. I know I'm always looking for quick and healthy recipes, as it feels like I never have enough time to actually cook something (shout out to Trader Joe's). But this took me around 30 minutes and I'm really proud of how it turned out, so I thought I would share!

Ingredients

  • Sweet potato
  • Chickpeas
  • Kale
  • Quinoa
  • Red onion
  • Avocado
  • Cherry Tomato
  • Tahini
  • Olive Oil
  • Lemon
  • Dijon Mustard
  • Salt
  • Pepper
  • Paprika
  • Garlic Powder

Lemon Tahini Dressing Recipe

  • 1/2 lemon juice
  • 1 tbsp tahini
  • 1 tbsp olive oil
  • 2 tsp dijon mustard

Directions:

  1. Preheat oven to 400
  2. Cut up your sweet potato into bite size pieces
  3. Drain your chickpeas
  4. Spread out your sweet potato pieces and chickpeas on a baking sheet
  5. drizzle olive oil over sweet potatoes and chickpeas, then sprinkle some salt, pepper, paprika, and onion powder (I apply pretty generously)
  6. Pop baking sheet in the oven for about 20 minutes (until sweet potatoes are golden and a bit crispy, and chickpeas are crispy)
  7. Prepare your quinoa
  8. Cut up your kale, red onion, avocado, and tomatoes
  9. Prepare the dressing
  10. And assemble your Buddha Bowl!

It’s as easy as that! This was a delicious, healthy, and a very filling lunch. What more can you ask for? It also makes a lot, so it would be great to make at the beginning of the week, and then eat for lunches for the next couple days. I hope you enjoy!
